Go for a Ninja Kawasaki 250cc, they are not expensive but still look cool and run at a decent speed, something bigger than that might give you trouble controlling or be too boring.
As far as learning to ride a motorcycle goes, I believe the smaller the better. Yes a Kawasaki EX250 Ninja would be a great bike to learn on. This bike will not get away from you, but will still do 105 top speed. It will just take a long time to get there. I don't mention this to encourage 105 mph riding, just to let you know a small bike's capabilities in case you're thinking a 250cc is a wimpy ride. You could probably handle a larger bike simply because of your height and weight. If you wanted to start a little bigger perhaps a Suzuki GS500, or Kawasaki EX500. The next step would be to a 600cc class sportbike, and these are pretty serious machines, actually. Serious as in zero to 60 in under 3 seconds serious. One of these would give you a bike you could "grow into" as they say, since a relatively new 600cc sportbike will problably outperform your own riding skills for a good number of years. One of these will "get away" from you. By this I mean that if you throttle too much at the wrong time, you will go down. A 250 or 500cc bike is less likely to do this.

Whichever bike you choose to begin with, it will only go as fast as you twist your wrist. If you are generally an under control person, you might get away with a larger , more powerful bike to start with. If not, and you still have some sense, start with something smaller. If riding is something you enjoy you've got an entire life's worth of bikes ahead of you, believe me. You don't need to win the Isle of Man TT on day 1.

Good luck, have fun, and wear a helmet.
I think your too tall for a Ninja 250. Get a Ninja 500. I'm a big fan of Yamaha at the moment, FZR/YZF 600 is also a good beginers sports bike.
With your size and weight, I would skip the Ninja 250 - it will be too short for you. I'd go with a Kawasaki Ninja 500 or a Suzuki GS500F. The GS is a cooler looking bike than the Ninja, so it would be my first choice. The platform has been around for a long time, so parts are very available for it also.

If you like the naked look, you might consider the Suzuki SV650. It is a V-Twin, so more comparable to the GS in the power department.

Get one used for the best deal.
Try the Ninja 500 don't get anything bigger than that because for your age you are looking to pay a lot for insurance keep that on mind. Good luck
