If I derestrict my 50cc scooter, does it mean that my insurance is nul and void?

If you dont tell the Insurance co that you changed the scooter, the policy is null if you have an accident and want to claim.

Derestrict like remove the muffler? Your insurance is on you driving that dangerious thing. And damage you can do with it. Ride with helmet please?
