What do the numbers on my bike's handlebars mean?

I can twist the knob thingy from 1-6. What do they mean? If I go up a hill, for instance, which should I use? On a regular road, say, paved?

They are your gears. They represent the ease of pedalling. The lower the gear the easier it is to pedal. Use a lower numbered gear for hills. It's hard to say what gear to use on paved roads - it depends on the slope condition etc etc. You will know which gear to use by the cadence you are pedalling at. if its to easy go up a gear and vice versa.

Hope this helps
I know that the lower the number the easier it is to ride and the higher the number the harder it is to ride.
