Is it leagal to ride a dirt bike on the interstate in Texas?


Or, just on major/public roads in general? Or are riders restricted to designated areas?

If the bike (and rider) is properly equipped and licensed for the street, riding on Interstates should be no problem, but if it's not licensed, then you can't ride it on any public roadway.
Yes. I ride my KX500 with dual side cars to work every day. I also car pool with it.
