Are road bikes with chromoly frames still being used in professional road races nowadays?

If what you mean is Chrome Moly, then the answer is yes, well, sort of.

Most of todays steels that are used for premium bike frames have at least a little chromium and a little molybdneum in them. For example, Reynolds 853, 753, 653, 631, and 531 were never really Chrome Moly while Reynolds 501 was. That didn't stop people from calling all these different steels by that name.

So, in loose terms, yes Chrome Moly is still used, but in the strictest sense the answer is 'no'.

From what I am reading, the answer is pretty much 'no'. Framesets used by the pro peloton (even regional pros) are going to be 853 steel, aluminum or carbon.

Chromo? They hardly use metal anymore. It's all carbon fiber. Strong and light, just don't crash it (or scratch it, or bump into it in any way).
