how is it possible for a road racer to lean his bike in a curve with out the bike falling over? is he holding the weight with his knee on the ground?

Think of riding a bicycle.
you have to lean left to turn left.
If you turn the handlebars left while sitting straight up, you would tip over to the right.
centrifugal force would push you right over.

The motorcycles you mention are moving very fast and have very sticky tires. The faster a two wheeled machine goes through a corner the more it must lean to prevent being pushed over the opposite direction.

The knee is touching the surface as a means to judge when they are at the steepest degree of lean the motorcycle is capable of. That doesn't hold them up it just lets them feel when they are touching the surface.
