Will any disc brake rotors work with my new shimano disc callipers?



I have just bought Shimano XTR M975 brakes, and i need some rotors. Do I need Shimano ones, or can I choose any.

Yes and no. It depends on your hubs. If you have Shimano centerlock-style hubs, then you should get a Shimano rotor. If you have standard 6-bolt IS hubs, then any rotor will work fine. They do make adapters that convert a centerlock hub to a 6-bolt and they get good reviews, so that might be an option if you want.

There are a few oddball rotors on the market, but pretty much a 160mm (6") rotor will fit any other brake system.
Mostly, yep. But you do need to check that the rotor width is the same size as Shimano.

I have used for a time Hayes rotors on a XT caliper without any problems.
Sorry to say, but the XTR M975's are centerlock specific. meaning, in order to replace them, you either need to use another centerlock specific rotor or an adapter to convert from centerlocks to international standards. Very few companies make Centerlock specific rotors so you are going to need to use Shimanos for now until you get the adapters to use 6 bolt pattern rotors.
Any rotor will work, but there are different standard for fitting the rotor to the hub, so make sure you buy the correct ones for your hub. And as your calipers will be set up for a specific rotor diameter, make sure you either buy the same size, or you'll need to change the fitting of the brake caliper.

Then, there are different types and quality of rotors available, as with many things you get what you pay for.
They are the new bikes out which I know nothing about.
