for dehydration, it actually can be answered with both.

water is the quickest hydrator to every product out there. but...

your body will need to retain the water in your system, plus keep your energy stores up to prevent an energy crash.
gatorade has the sugar for energy, salt to store the water and the water to hydrate.

depending on how long your cycling for and where you live (temps), you may be able to get off by using just plain water.
this is something that you may have to experiment with.

I'm living in texas with the temps in the triple digits right now, and i'll be sure to leave my house with at least one bottle of some sports drink or mix. ;o)

Water has always and will always be the best choice but bringing something like green tea or powerade would work just as well- the reason i don't recommend Gatorade is because it's loaded with SUGAR but powerade has a smaller amount.

Studies have shown that athletes who hydrate with Gatorade outperform athletes who hydrate with just water in a number of key performance measures, including the ability to exercise longer before succumbing to fatigue, maintain a faster sprint speed in the second half of a competition period, and exhibit higher explosive power both overall and later in exercise.

And the best part is that it taste a whole lot better.

Depends on what kind of riding your're doing. And how hot it is. I've seen serious riders with four water bottles on their bike. If you're sweating alot,a sport drink can help. Maybe a bottle of both ?
Besides losing water your body loses nutrients during exercise. Water is 95% of what you need and for most people's cycling regiem water is sufficent. Many swear by the sport drinks but the effects are mostly sugar and caffeen. A simple mix that I use is 25-75 mixture of lemonade and water with a pinch of salt in each bottle. The lesser sugar conentration provides more than enough glucose and the minor amount of salt is undetectable in taste but vital to recovery and hydration. Also the diluted citric acid in the lemonade helps to cut that sticky dry mouth feeling.
