what's the best way to LOCK a bike into a truck? throw out any ideas except about the "bike stand for a truck", those don't lock. and id prefer not to use any cable locks

I would get a product from Yakima called the Locking Bed Head. It attached to your truck bed and locks the fork of the bike to the truck. It does not require any drilling and is pretty darn strong. It should cost about $75 with the lock core.
